Dit is een biochemische stof (biogene amine) die betrokken is bij verscheidene fysiologische processen. Het speelt een rol in het maagdarmkanaal, fungeert als neurotransmitter in het centrale zenuwstelsel en heeft een functie in het afweersysteem. Histamine wordt in het maagdarmkanaal vrijgezet bij allergische reacties veroorzaakt door voeding, verteringsproblemen, parasitaire infecties of de aanwezigheid van de darmbacterie Helicobacter pylori. Het wordt vrijgemaakt uit mestcellen en basofiele granulocyten. Wanneer het enzym DAO (Diamineoxidase) niet voldoende aanwezig is, wordt histamine niet (voldoende) afgebroken en zal de hoeveelheid histamine en daarmee samengaande klachten toenemen.
